So I have this thing for salads. And not just any salad but a very particular salad that I have created from years of scouring NYC salad bars. Trust me, it works. There's something about the textural differences provided by the crunch of the walnuts, the soft chew of the egg and the flavor differences of the sweet cranberries and salty feta that really make this salad pop on your palate. I had this delectable combination for lunch at an indoor farmer's market/specialty story and knew I had to share my secret. Don't believe me? Try it yourself.
-Few handfuls mesculin lettuce
-1/4 cup dried cranberries
-1 hardboiled egg (chopped)
-3 tablespoons fresh feta cheese
-2 tablespoons corn kernels (cooked)
-1/2 beet (sliced)
-3 tablespoons mandarin oranges
-2 tablespoons walnuts (chopped)
Dress with dressing of choice, (I prefer a nice sesame ginger) and ENJOY!
